Pineapple Upside Down Double Decker

Like the original “double-decker” I combined two favorites to create this masterpiece.  The cheesecake is baked atop the pineapple upside-down pen patat.  The caramelized rapadou glaze, sweet, tender, and juicy pineapple, and maraschino cherries are sandwiched between the pen patat and the cheesecake.  Juices from the fruits seep and magically blend into both the pen patat and the cheesecake.  The result is a taste that will simply blow your mind!
